Jamaica Margaritas

Ingredients:
  • 1 cup dried hibiscus blossoms (about 2 ounces)
  • 3 cups water
  • 3/4 cup sugar
  • 1 1/4 cups tequila
  • 1/2 cup fresh lime juice
  • 1/3 cup Triple Sec or other orange-flavored liqueur
  • 8 lime slices
Directions:
  1. Place blossoms in a strainer; rinse under cold water. Combine blossoms, water, and sugar in a medium saucepan; bring to a boil. Reduce heat, and simmer 10 minutes. Strain; discard blossoms. Cover and chill hibiscus mixture.
  2. Combine hibiscus mixture, tequila, juice, and Triple Sec. Serve over ice. Garnish with lime slices.
Note:
Hibiscus blossoms can be found at Latin grocery stores. Boiling the blossoms in a sugar-water mixture and then steeping infuses more flavor than just steeping them in warm water. This drink is especially good when made with premium-quality tequila.

Orange-Ginger Margarita

INGREDIENTS

  • 1 can frozen orange juice concentrate
  • 10 oz. tequila
  • 6 oz. ginger liqueur (like Domaine de Canton)
  • 1 tsp. grated ginger
  • 4 c. ice
  • 2 tbsp. kosher or margarita salt
  • Crystallized ginger, optional

DIRECTIONS

  1. Place frozen orange juice concentrate (reserve 1 tablespoon), tequila, ginger liqueur, ginger, and ice in a blender and mix until ice is crushed.
  2. Place reserved tablespoon concentrate on a small plate and salt on another small plate. Dip rims of 4 glasses in concentrate and then in salt. Fill glasses, garnish with crystallized ginger if desired, and serve.

Fresh Mint Margaritas

INGREDIENTS

  • ½ c. chopped mint leaves
  • ½ tsp. kosher salt
  • 4 c. Crushed ice
  • 1½ c. good-quality tequila
  • 1 c. freshly squeezed lime juice (from about 8 limes)
  • 1 c. triple sec

DIRECTIONS

  1. In the bottom of a large (2-quart) pitcher, crush together mint and salt, pressing with the back of a wooden spoon. Add ice. Add tequila, lime juice, and Triple Sec, stirring vigorously. Serve in short tumblers or wineglasses.

Slushy Margarita Shots

INGREDIENTS

  • 6 oz. tequila
  • 2 Limes, juiced
  • 2 tbsp. agave nectar
  • 1 c. ice, chopped in the blender
  • 1 lime wedge
  • Salt, for rimming glasses
  • Chopped strawberries, pineapple, blackberries, and raspberries , for shots

DIRECTIONS

  1. In a blender, blend tequila, lime juice, honey, and ice.
  2. Run a lime wedge along the tip of the shot glasses and dip in salt to rim glasses.
  3. Fill shot glasses with chopped fruit and pour over tequila mixture.

INGREDIENTS

2 ounces tequila
3 ounces cranberry juice
1 ounce lime juice
2 ounces Grand Marnier orange liqueur
Lime slice for garnish

PREPARATION

Pour the tequila, cranberry juice, and lime juice into a cocktail shaker with ice cubes.
Shake well.
Strain into a chilled stemmed glass.
Splash with Grand Marnier.
Garnish with the slice of lime.

Tequila Sunrise

It’s a movie, it’s a song, but it makes a great drink too

Ingredients:
1 1/2 oz tequila
4 oz orange juice
1/2 oz grenadine
Orange slice for garnish

Directions:
Fill glass with ice
Add tequila, and orange juice – Stir
Add the grenadine and allow it to settle in a layer at the bottom of the glass
Attached orange slice

Champagne Mango Margaritas

Ingredients:

2 tablespoons water
2 tablespoons sugar
1/2 cup fresh orange juice
1/2 cup tequila
1/4 cup mango nectar
1/4 cup fresh lime juice
1/4 cup Triple Sec
3 Champagne mangoes, peeled, seeded, chopped, and frozen (about 3 cups)
3 dried pequín chiles or chiles de árbol
1 cup ice
1/2 teaspoon kosher salt, divided
3/8 teaspoon sugar
1 lime wedge

Directions:

1. Combine 2 tablespoons water and 2 tablespoons sugar in a microwave-safe glass measuring cup; microwave at HIGH 2 minutes. Stir until sugar dissolves. Combine sugar mixture, orange juice, and next 6 ingredients (through chiles) in a blender, and process until smooth. Add ice to blender; pulse to combine. Stir in 1/8 teaspoon salt. Chill in refrigerator 30 minutes, stirring after 15 minutes.
2. Combine remaining salt and 3/8 teaspoon sugar in a saucer. Rub the rims of 6 glasses with 1 lime wedge; spin rim of each glass in salt mixture to coat. Fill each glass with about 2/3 cup margarita.

Note:
Champagne mangoes are also called Ataulfo mangoes. Other varieties may be used but won’t be as smooth. Use more mango nectar to compensate.
